As a home health care provider, we have quite a few clients that are diabetics. As is common knowledge, diabetics require meals that meet diabetic nutritional requirements. As part of their daily tasks, our Home Health Aides (HHA) and Personal Care Workers (PCW) routinely prepare meals for some of these diabetic clients. With the guidance of some of our Home Health Aides and Personal Care Workers, we have scoured the internet. Hence, we have put together a list of very quick, easy, and healthy diabetic meals. These recipes can be used to quickly prepare diabetic appropriate meals for home care clients.
Alice Springs Chicken
We found this meal on www.everydaydiabeticrecipes.com. This restaurant-fancy chicken recipe is one you’ll want to use when you really want to impress company! We think the layer of mushrooms and flavorful sauce really add an extra-special flair to our Alice Springs Chicken. The best part? You can whip this up in just 30 minutes!
What you’ll need:
- 2 teaspoons canola oil
- 1 1/2 cup sliced mushrooms
- 1/4 cup diced lean ham or Canadian bacon
- 4 (6-ounce) boneless, skinless chicken breasts
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 (10-3/4-ounce) can low sodium reduced-fat cream of chicken soup
- 3/4 cup reduced-fat milk
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/4 cup shredded reduced-fat mozzarella cheese
What to do:
- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large skillet over medium-high heat, heat oil; saute mushrooms and ham 5 to 7 minutes, or until they begin to brown.
- Sprinkle chicken on both sides with garlic powder and pepper; place in baking dish. Spoon mushroom mixture evenly over chicken.
- In a medium bowl, whisk soup, milk, thyme, and onion powder. Spoon over mushroom layer. Sprinkle with cheese.
- Bake 25 to 30 minutes, or until chicken is no longer pink in center.
Diabetic Sloppy Joes

What you’ll need:
- 1 1/2 pounds lean ground beef
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 6 – ounce can vegetable juice
- 1/2 cup ketchup
- 1/2 cup water
- 2 tablespoons no-calorie, heat-stable granular sugar substitute
- 2 tablespoons chopped, canned jalapeno peppers (optional)
- 1 tablespoon prepared mustard
- 2 teaspoons chili powder
- 1 teaspoon Worcestershire sauce
- 8 whole wheat hamburger buns, split and toasted
- Shredded reduced-fat cheddar cheese (optional)
- Sweet pepper strips (optional)
What to do:
- In a large skillet cook ground beef*, onion, and garlic until meat is brown and onion is tender. Drain off fat. *TIP: You can substitute lean ground turkey (at least 93 percent lean, or 93/7) in place of ground beef.
- Meanwhile, in a 3-1/2- or 4-quart slow cooker combine vegetable juice, catsup, water, sugar substitute, jalapeno peppers (if desired), mustard, chili powder, and Worcestershire sauce. Stir in meat mixture.
- Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. Spoon meat mixture onto bun halves. If desired, sprinkle with cheese and serve with sweet pepper strips. Makes 8 servings.
Diabetic Grilled Cheese Sandwich

What you’ll need:
- 1 ounce light cheddar cheese
- 2 slices whole wheat bread
- 1 1/2 teaspoon light margarine
- 2 tablespoons egg substitute
- 1 tablespoon skim milk
What to do:
- Place cheese on one slice of bread. Top with remaining bread slice.
- In a shallow bowl, combine egg substitute and skim milk.
- Melt margarine in a large nonstick skillet. Dip sandwiches in egg mixture. Cook sandwiches for 3 minutes on each side or until golden.
Diabetic Egg Salad Sandwich
We found this recipe at www.food.com. Who doesn’t love the taste a good egg salad sandwich? This one has a little more ingredients than a simple traditional egg salad recipe, but it’s worth it.
What you’ll need:
- 2 large hard-cooked eggs, cooled
- 1 tablespoon nonfat sour cream
- 2 teaspoons sweet pickle relish
- 2 teaspoons reduced-fat mayonnaise
- 1⁄4 teaspoon dijon-style mustard
- 1 pinch salt (optional)
- 1⁄4 cup celery, finely-chopped
- 2 slices whole wheat bread, reduced-fat
- paprika, for garnish (optional)
What to do:
- Cut each egg in half.
- Carefully remove the yolks.
- Discard one yolk.
- In a small bowl, mash the remaining egg yolk.
- Add the sour cream, pickle relish, mayonnaise, mustard, and salt (if desired).
- Stir to mix well.
- Stir in the celery.
- Chop the egg whites and stir them into the yolk mixture.
- Spread the mixture on each slice of bread.
- Serve as open-faced sandwiches.
- If desired, garnish with a light sprinkling of paprika.
